If you’re looking for a super simple and delicious way to include more zucchini into your diet, this refreshing Mint and Zucchini salad is a great place to start. 

I love the combination of flavors! The fresh mint mixed with raw zucchini topped with feta and drizzled with a lemony vinaigrette makes this salad a perfectly refreshing and nourishing salad the entire family can enjoy.

When are zucchinis in season?

Although zucchini’s prime season ranges from May to August, most grocery stores carry this vegetable year round (yay!). So, while I generally tend to make this salad during the warm summer months, it’s also a great pick me up during those dreary winter months.  

Oh, and did I mention, it takes less than 10 minutes to put together and only requires 5 ingredients?! 

Don’t have a spiralizer?

While I personally love using a spiralizer for this recipe, it isn’t a necessity. You can also use a traditional vegetable peeler or simply use a box grater. Note: I love the OXO Good Grips 3-Blade Hand-Held Spiralizer. It’s easy to use and doesn’t take up much space in my kitchen cabinet.

If using a vegetable peeler, thinly peel the zucchini into thin ribbons and then slice, lengthwise, into long strips.

If using a box grater, just run your zucchini along your grater (recommend grating over the large holes) until you’ve shredded the amount desired zucchini.

Refreshing Mint and Zucchini Salad

This refreshing mint and zucchini salad takes less than ten minutes to make and requires only 5 simple ingredients. The perfect side dish for your busy weeknight meals!

Ingredients

For the salad:

  • 1 large zucchini, spiralized
  • 2 tbsp feta, crumbled or diced
  • 3 tbsp (1/2 bunch) fresh mint, chopped

Vinaigrette:

  • 1 lemon, juiced
  • 2 tbsp olive oil
  • salt & pepper, to taste

Instructions

  1. Using a hand-held spiralizer, spiralize your raw and unpeeled zucchini. 
  2. Place your zucchini spirals into a medium sized bowl and top with crumbled feta and chopped mint leaves. Set aside.
  3. In a small bowl add the juiced lemon, olive oil, salt and pepper. Mix until ingredients are thoroughly combined.

Serve zucchini salad in a small salad bowl and top with desired quantity of lemony vinaigrette! Enjoy!
