- Using a hand-held spiralizer, spiralize your raw and unpeeled zucchini.
- Place your zucchini spirals into a medium sized bowl and top with crumbled feta and chopped mint leaves. Set aside.
- In a small bowl add the juiced lemon, olive oil, salt and pepper. Mix until ingredients are thoroughly combined.
Serve zucchini salad in a small salad bowl and top with desired quantity of lemony vinaigrette! Enjoy!
