But despite my best efforts, I often ended up with half-torn whites, shells that were tough to peel, or yolks that were either overcooked or undercooked. Is it the end of the world? No. Do I still love my eggs? Absolutely. But after countless attempts—from using older eggs (which supposedly peel easier) to starting with cold water and bringing it to a boil—I was still facing peeling challenges.

Then, I stumbled upon the method I’m about to share with you—and it’s been a game changer. Not only are my eggs perfectly hard-boiled- every time, but the shells slip right off and the yolks cook to perfection. Finally, success!

Here’s the key:

  1. Boil your water first! Then, reduce the heat to a gentle simmer with small, steady bubbles. Carefully place the eggs in the water and cook them to your desired doneness:
  • Soft-boiled: 6–7 minutes for a slightly runny yolk
  • Medium-boiled: 8–9 minutes for a creamy, partially set yolk
  • Hard-boiled: 10–12 minutes for a fully set but tender yolk

2. Once the eggs are cooked, immediately transfer them to an ice bath and let them cool for 10–15 minutes. Trust me, don’t skip this step—it makes peeling so much easier.

3. After they’ve cooled, crack and peel.

How to store your hard-boiled eggs:

The best way to preserve your hard-boiled eggs is to keep them unpeeled in their shells in an airtight container. It’s best to store them in the main compartment of your fridge rather than the door, where the temperature fluctuates more. Hard-boiled eggs can last in the fridge for up to one week as long as they’re stored in an airtight container.

If peeled, store them in an airtight container with a wet paper towel to avoid them drying out, and eat within 5 days. Just like unpeeled eggs, store them in the main part of your fridge.
