Lentil Grapefruit Salad With Pumpkin Seeds & Feta

Here’s a super easy and delicious recipe you can make during any point of your busy week. Takes less than 25 min to make and is packed with amazing nutrients.

Ingredients

  • 1 cup green lentils, cooked per package instructions
  • 1 grapefruit, cut into cubes
  • 1/2 shallot, chopped
  • 1 bunch mint leaves, chopped
  • 2.5 tbsp feta
  • 2 tbsp pumpkin seeds
  • 1 lime (juiced)
  • 2-3 tbsp olive oil
  • salt & pepper (to taste) To taste

Instructions

Salad

  • Cook lentils per package instructions and let cool.
  • While lentils are cooling, chop up shallot and mint leaves. Add to salad bowl.
  • Slice grapefruit into quarters, peel, and then cut them into cubes. Add to salad bowl.
  • Once lentils have cooled, add to salad bowl and mix thoroughly with grapefruit, shallots, and mint.
  • Dice feta into small cubes. Add to salad bowl.
  • Top with pumpkin seeds. The more the better in my book!

Dressing

  • In a separate bowl mix the juiced lime, olive oil, salt, and pepper.
    In a small bowl add olive oil, freshly squeezed lime juice, salt, and pepper. Whisk together. Adjust seasoning as desired.
    NOTE: I like to store my dressing on the side as it helps keep my veggies from getting soggy. I just pour it over my salad on an as needed basis.
