A super simple way to reduce your food waste? Turn your kale stems into a delicious pesto. Not only is this Kale Stem & Garlic Recipe zero-waste but it’s super healthy and easy to make!
Zero-Waste Kale Stem & Garlic Pesto Recipe
This pesto recipe is one of my favorites — it’s easy to make, tastes great, and is, of course, full of health benefits. Plus, it’s just a great way to make the most of your kale stems. (Recipe courtesy of The CSA Cookbook)
Here’s what you’ll need.
* 1 cup chopped kale stems
* 1/2 cup packed fresh parsley with stems
* 1/2 cup toasted walnuts
* 3 garlic cloves
* 1/2 teaspoon kosher salt
* 1/4 teaspoon red pepper flakes
* Zest of 1 lemon
* Juice of 1/2 lemon
* 1/4 to 1/2 cup olive oil
Instructions:
Add kale, parsley, garlic, lemon zest, lemon juice, toasted nuts, and spices to blender. Once completely blended slowly add olive oil. Continue blending/pulsing until pesto has a creamy texture.
And, voila! that’s it! It literally takes 10 min and I guarantee the whole family will love it!
You can add this pesto to pasta, to your soups, sandwiches, pizza…the list is endless.
Tip: got lots of stems to use up? Make a large batch of pesto and freeze it till you need it.
