Fill a pot with enough water to cover the eggs by at least 1 inch. Bring the water to a rolling boil over medium-high heat.
Reduce the heat to a gentle simmer with small, steady bubbles. Using a large spoon, carefully lower the eggs into the water. Lowering the temperature helps prevent the eggs from bouncing around, which could crack the shells.
Once cooked, immediately transfer the eggs to a bowl of ice water and let them sit for 10–15 minutes. This stops the cooking process and helps shrink the egg whites slightly, making the shells easier to remove.
