French Tomato Salad Recipe

This deliciously refreshing tomato salad takes less than 10 minutes to assemble and is the perfect side dish to any summer meal!

Ingredients

  • 2 medium tomatoes, thinly sliced or diced
  • 1/2 shallot, finely minced
  • 34 fresh basil leaves, chopped

Vinaigrette: 

  • 1 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Pinch of salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Thinly slice or dice the tomatoes and place them in a large bowl.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, minced shallot, salt, and pepper until the mixture is emulsified. Taste and adjust the seasoning as needed.
  3. Drizzle the vinaigrette over the tomatoes and toss gently to coat.
  4. Sprinkle the chopped basil on top, and serve immediately. 

Notes

2 tomatoes yield about 1 cup diced.
